Our philosophy is simple: we make only the wines we ourselves would like to drink. <\/p>\n\n<h2 class=\"wp-block-heading\">Where are the wines produced?<\/h2>\n\n<p class=\"wp-block-paragraph\">At our family\u2019s two farms (Galeotti Ottieri della Ciaja and Galli): the Cavaglioni Farm in San Rocco a Pilli (Sovicille, Siena) and Palazzo di Piero in Sarteano (Siena), the latter being particularly well-suited to and famous for its Sangiovese.<\/p>\n\n<h2 class=\"wp-block-heading\">What wines do you produce?<\/h2>\n\n<p class=\"wp-block-paragraph\">The white Auscello; the reds Galeotto, Purneia (long maceration), and Bachiarro; the ros\u00e9 Mustiola; the Sangiovese sparkling wines Anicisa (ancestral method) and Roizone (classic method); and the sweet wine Luchetto, made from cooked grape must. We also produce extra virgin olive oil, extra virgin olive oil flavored with white truffles, and Tuscan cantucci. <\/p>\n\n<h2 class=\"wp-block-heading\">Are your wines organic? Are you members of any winemakers&#8217; associations? <\/h2>\n\n<p class=\"wp-block-paragraph\">Yes, we practice organic viticulture and natural winemaking. We are proud members of FIVI (Italian Federation of Independent Winemakers) and Vinnatur, the association of natural winemakers. <\/p>\n\n<h2 class=\"wp-block-heading\">Do wines contain sulfites? How natural are they? <\/h2>\n\n<p class=\"wp-block-paragraph\">We use minimal intervention: spontaneous fermentation, no selected yeasts, and no winemaking additives. Added sulfites are kept to a minimum or are absent, depending on the label. <\/p>\n\n<h2 class=\"wp-block-heading\">What is your specialty?<\/h2>\n\n<p class=\"wp-block-paragraph\">Sangiovese is the heart of Palazzo di Piero in Sarteano. This same grape variety is used to produce the red wines Galeotto and Purneia, the sparkling wines Anicisa and Roizone, the ros\u00e9 Mustiola, and the sweet wine Luchetto. <\/p>\n\n<h2 class=\"wp-block-heading\">What is the difference between Anicisa and Roizone sparkling wines?<\/h2>\n\n<p class=\"wp-block-paragraph\">Anicisa is a sparkling wine made using the ancestral method, meaning it undergoes a second fermentation in the bottle without the addition of refined sugars or selected yeasts. Roizone is a classic-method Sangiovese ros\u00e9 sparkling wine, undergoes a second fermentation in the bottle with reduced use of sulfites. Both are made from Sangiovese grapes.  <\/p>\n\n<h2 class=\"wp-block-heading\">What is Purneia, and what does \u201clong maceration\u201d mean?<\/h2>\n\n<p class=\"wp-block-paragraph\">Purneia is a naturally fermented Sangiovese-based red wine that undergoes a long post-fermentation maceration on the skins, which gives it structure, complexity, and aging potential.<\/p>\n\n<h2 class=\"wp-block-heading\">What grape varieties do you use?<\/h2>\n\n<p class=\"wp-block-paragraph\">Primarily Sangiovese, along with Trebbiano and Grechetto for the white Auscello, and Canaiolo and Cabernet Sauvignon in the blend for the red Bachiarro.<\/p>\n\n<h2 class=\"wp-block-heading\">How can I buy the wines?
